Here I come with an amazing and delicious recipe “Yakhni Pulao”. Yakhni pulao is served as the main course in the sub-continent because without it the lunch or dinner is incomplete. During the season of festivals, it is among one of the most awaiting dishes. I always love to eat and cook yakhni pulao. So I thought I should share my recipe with you.
Ingredients to Prepare Yakhni Pulao:
- Mutton (1kg)
- Rice (1kg)
- Green cardamom
- 1tsp cloves
- 1tsp cumin
- 1 stick cinnamon
- 2 bay leaves
- 2 tsp black pepper berries
- 3 large onions
- Salt as per taste
- Red chili powder as per taste
- 3 tsp ginger garlic paste
- Oil 3/4 cup
Method to cook:
Prepare the Yakhni
Put mutton in a pressure cooker and then add 2cups of water in it. Now add green cardamom, cloves, cumin, cinnamon, bay leaves, black pepper berries, garlic, and 1onion, and then close the pressure cooker. Put it on a medium flame for 30 minutes.
You may wrap all the spices in a muslin cloth because sometimes it happens that the spices stick to the meat. So if you bother with the appearance of spices in the Yakhni as it will stick to the meat. After 20 minutes turn off the flame and check the meat. If it is tender then the Yakhni is ready. If not then put it on flame for another 10 minutes.
When the meat becomes tender, sieve it. Drain the stock and then discard onion and ginger. Remove the spices from meat by hand.
Set the meat aside.
You should have approximately 4-5 cups of stock.
Prepare the pulao
Take a heavy bottom pan and add 2 large sliced onions to it. On medium heat, fry the onions till caramelized. This will take 5-10 minutes. The onions will darken after 10 minutes, and this will give pulao a beautiful color. Add half cup water and cook onion in it. then add salt, red chili powder, and ginger garlic paste it and cook it well. Turn the heat to low after 5 minutes.
For 1 kg rice 6 cups of water are used. For this recipe add 5 cups of stock the remaining measurement will be fulfilled with water and then add soaked rice and meat in it. Then cover the lid and allow the rice to cook for 10 minutes on low flame.
Now after 10 minutes cover the pot with a muslin sheath and put the flame on low flame for another 10 minutes.
Turn off the flame. Don’t remove the lid immediately because steam would release and rice will not cook properly. Remove the lid after 5 minutes. The delicious Yakhni Pulao is ready. You can serve it to 5-7 people.
Serve it with plain yogurt or raita.
